Salsa Verde (Green Sauce) is a delicious blend of parsley, capers, garlic, cashew nuts, olive oil, anchovies, and vinegar. It is commonly used atop fish or crostini, or as a pasta salad dressing, not as a warm pasta sauce. Try it on warm boiled potatoes for an unusual side dish to meat or poultry.
The red peppers used in Rustichella’s Red Pepper Sauce are the sweet variety which creates a bold rather than "hot" taste. It bursts with the flavor of roasted red peppers, olive oil, cashew nuts, and garlic.
Sage Pesto is a typical Genovese specialty. Made from olive oil, fresh sage, dry milk, rice flour, Sicilian sea salt and garlic this pesto is outstanding. Sage Pesto is perfect on grilled fish or meat. It is a great addition to seasonal soups when used as either a seasoning or garnish.
Each jar contains enough for a pound of pasta, or can be extended by adding equal amounts of olive oil to the sauce.
